做法:洗(xǐ )净宰(zǎi )好鲫(jì )鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小块姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油六成热(rè )下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼(yú )和(hé )其他材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小时,下盐调味即可品尝。
