做法:洗(xǐ )净(jìng )宰好鲫鱼(yú ),洗(xǐ )净淮(huái )山和薏米(mǐ )。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅(guō ),用姜块在(zài )锅上(shàng )擦(cā )一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和其他材(cái )料,武火煮(zhǔ )沸,转中小火煲一(yī )个(gè )半小(xiǎo )时,下盐调味即可品尝。
