做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段(duàn )。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入(rù )少量(liàng )清(qīng )水半(bàn )掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
