做法:春笋切成(chéng )片(piàn )后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生(shēng )姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均(jun1 )匀稍(shāo )收(shōu )汁时盖上锅盖(gài )焖(mèn )。
