做法:春笋切成片后加少许盐(yán )捞出(chū )后用(yòng )清水浸泡,生(shēng )姜切片,葱(cōng )切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半(bàn )掩(yǎn )住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
