做法:洗(xǐ )净宰好(hǎo )鲫鱼,洗净淮山和薏米。用(yòng )清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用(yòng )姜(jiāng )块在锅上(shàng )擦一遍,放两勺油(yóu ),待(dài )油六成热下(xià )鱼,煎至微黄(huáng )。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转中小火煲一个半小时,下盐调味即可(kě )品尝。
