做法(fǎ ):洗净宰好鲫(jì )鱼,洗(xǐ )净淮(huái )山和薏米。用清(qīng )水把(bǎ )陈皮(pí )泡软,拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入(rù )煎煮(zhǔ )好的鲫(jì )鱼和其(qí )他(tā )材料,武火煮沸,转中小(xiǎo )火煲一(yī )个半(bàn )小时,下(xià )盐调味即可品尝。
