做法:春笋切成片后(hòu )加少(shǎo )许盐(yán )捞出后用清(qīng )水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时(shí )盖上锅(guō )盖(gài )焖。
