做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后(hòu )用清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
