做法(fǎ ):春笋切成片(piàn )后加少许盐捞出后(hòu )用清水(shuǐ )浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒1分钟左右。再(zài )加(jiā )入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
