做法:春(chūn )笋(sǔn )切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
