做法:春笋(sǔn )切成(chéng )片后加(jiā )少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加(jiā )入盐,翻(fān )炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖。
