做法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半(bàn )掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快(kuài )熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁(zhī )时盖(gài )上锅盖焖。
