做(zuò )法:春笋切成片后加少许盐(yán )捞出后(hòu )用清水(shuǐ )浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩(yǎn )住春笋,盖上(shàng )锅盖大(dà )火(huǒ )煮开后转中火。煮到水快熬干(gàn )的时(shí )候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖上锅盖焖。
