做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅(guō ),用姜块在锅上擦(cā )一遍,放两勺油,待油六成(chéng )热下鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫(jì )鱼和(hé )其他材(cái )料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个半小时(shí ),下盐调味(wèi )即可品(pǐn )尝。
