做法:洗净宰好鲫鱼,洗净淮山和(hé )薏米。用(yòng )清水(shuǐ )把陈(chén )皮泡软,拍(pāi )裂一小块姜(jiāng ),热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油(yóu )六成热下(xià )鱼(yú ),煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐调味即(jí )可品尝。
