做法:春笋切(qiē )成片(piàn )后加少许(xǔ )盐捞(lāo )出(chū )后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春(chūn )笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒(chǎo )均匀稍收汁(zhī )时盖上锅盖焖。
