做法:春笋(sǔn )切成片(piàn )后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干的(de )时候加(jiā )入盐,翻炒均匀(yún )稍(shāo )收汁时盖上(shàng )锅盖焖(mèn )。
