做法:春笋切成片后加少许(xǔ )盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬干(gàn )的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
