做法:春笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入(rù )生(shēng )姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到(dào )水快(kuài )熬干(gàn )的时(shí )候(hòu )加入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖。
