做法:春笋(sǔn )切成片后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量(liàng )清水半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到(dào )水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖(gài )焖。
